Can I delete system apps if rooted?

I want to delete all the unwanted system apps if I don't need them, including: Connect, Gallery, Migrate, Play Movies & TV, Play Music, etc... Can I do that if I am rooted, or do I have to flash a custom ROM and a minimal GApps? I want the stock ROM, but prefer a minmal GApps like the Open Gapps (pico).
