A little help please (Permissions in Lollipop)

I just ordered a Z two days ago and I am looking for some answers :) :p

I'd like to modify or revoke the permissions of certain apps, as that can be very annoying if you have no root, and I only had (and rooted) HTCs and Samsungs before so I don't know how a Sony works.!

I was reading on rooting the Z, but now I'm afraid I might lose the quality of the Bravia engine by doing so...

My question is, can you modify/decline permissions in Lollipop without root? I couldn't find a straight answer and although there are apps on the Play Store advertising this, is it for real or is it just placebo?

Secondly, in case I root the Z, what do I lose? I've done my reading on the forums for the last week, beginning even before I made the purchase, but I'd very much appreciate some comments on this matter. Thanks :)
